This dish can be substitute for routine Subji-Roti. The Dhoklis with torai subji is very interesting and new recipe and is from old school Maharashtrian recipes Ingredients: Pre Preparation: Make and keep ready dough of wheat floor 1 big cup. Regular dough used for roti - Torai or Ridge Gourd 3 pieces of medium size, pilled off and cut - 1 medium sized tomato finely chopped - Mustard seeds 1 tsp - Asafoetida 1/2 tsp - Green chili paste 1-2 tsp as per taste required - Turmeric 1/2 tsp - Red Chili Powder 1 tsp - Coriander Powder 1 tsp - Cumin(Jeera) Powder 1 tsp - Ginger 1 inch - Crushed - Garam Masala -1 tsp - Salt to taste - finely chopped coriander - Turmeric 1/4 tsp - 1 tbs oil Procedure: 1. Pill off Torai and cut in medium sized pieces 2. Heat 1 tbs of oil in kadhai or pan 3. Add rai(mustard seeds), Asafoetida and sauté 4. Add Green Chili paste and sauté 5. Add finely chopped tomato and cook 50 % 6. Add Turmeric, Red Chili Powder, Coriander Powder, Cumin Powder & salt . Add little amount of water 7. Wait till tomato is well cooked 8. Add cut torai and mix well 9. Mean while make dhoklis from small balls of the aata/dough 10. Put these dholkis 6-8 numbers in kadhai with subji 11. Cover the dhoklis well with torai subji 12. Add salt, coriander and Garam Masala 13. Simmer and cook well for 4-5 minutes on low flame 14. When dhoklis are well cooked and flavours well absorbed in them, serve hot 15.
