Simple Durban Vegetable Pickle Recipe: Ingredients: 2 cups carrots, chopped 1 cup cabbage, chopped 1 cup green beans, chopped 1 large onion, chopped 1 cup cauliflower, chopped 2 Tblsp coarse salt 1 Tblsp sugar 2 cloves of garlic 1 cup white vinegar 1 cup of vegetable oil Method: 1. Place all vegetables in a large dish and add vinegar, salt and sugar. 2. Mix well, cover and set aside overnight. 3. The next day, drain all the vegetables, add pickle masala and garlic.
