Kathiawari Aloo Chana Chaat
Serves 5-6

Ingredients:
Prepare Hari Chutney:
-Hara dhania (Fresh coriander) handful
-Podina (Mint leaves) handful
-Hari mirch (Green chillies) 3-4
-Adrak (Ginger) 1 inch piece
-Lehsan (Garlic) cloves 3-4
-Zeera (Cumin seeds) 1 tsp
-Sev nimco 2 tbs
-Namak (Salt) ½ tsp or to taste
-Kala namak (Black salt) ½ tsp
-Lemon juice 3 tbs
-Water ¼ Cup
Prepare Kathiawari Cholay:
-Aloo (Potato) boiled & cubes 1 medium
-Safed chanay (Chickpeas) boiled ¼ Cup along with its water
-Imli pulp (Tamarind pulp) ½ Cup (80g tamarind soaked in ½ Cup water)
-Tomato ketchup 4 tbs
-Sabut dhania (Coriander seeds) roasted & crushed 2 tsp
-Haldi powder (Turmeric powder) ½ tsp
-Zeera (Cumin seeds) roasted & crushed 2 tsp
-Lal mirch (Red chilli) crushed 1 tsp
-Chaat masala 1 tsp
-Namak (Salt) ½ tbs or to taste
-Lal mirch powder (Red chilli powder) ½ tbs or to taste
-Chicken powder 1 tbs
-Zarda ka rang (Orange food color) ¼ tsp
-Water 2 Cups
-Water 1 litre
-Safed chanay (Chickpeas) 300g (boiled until 90% done)
-Aloo (Potatoes) boiled & diced 3 large
-Hari mirch (Green chillies) sliced 3-4
-Hara dhania (Fresh coriander) chopped handful
-Tamatar (Tomato) deseeded & chopped
-Chaat masala
-Lal mirch (Red chilli) crushed
-Pyaz (Onion) sliced
-Papri
-Har dhania (Fresh coriander) chopped
Directions:
Prepare Hari Chutney:
-In a blender jug,add fresh coriander,mint leaves,green chillies,ginger,garlic,cumin seeds,sev nimco,salt,black salt,lemon juice,water,blend well & set aside.
Prepare Kathiawari Cholay:
-In a blending jug,add potato,chickpeas along with its water,tamarind pulp,tomato ketchup, coriander seeds,turmeric powder,cumin seeds,red chilli crushed,chaat masala,salt,red chilli powder, chicken powder,orange food color,water & blend well.
-Transfer to a wok,add water,mix well & bring it to boil.
-Add chickpeas,potatoes,green chillies,fresh coriander,mix well & cook on medium flame for 18-20 minutes,cover & cook on low flame for 4-5 minutes.
-On a serving plate,add khathiawari cholay,prepared hari chutney,tomato,chaat masala,red chilli crushed,onion,papri,fresh coriander & serve with pav buns!

Directions:
Prepare Hari Chutney:
-Blender jug mein hara dhania,podina,hari mirch,adrak,lehsan,zeera,nimco sev,namak,kala namak,lemon juice aur pani dal ker ache tarhan blend ker lein & side per rakh dein.
Prepare Kathiawari Cholay:
-Blender jug aloo,safed chanay pani ka saath,imli pulp,tomato ketchup,sabut dhania,haldi powder,zeera,lal mirch crushed,chaat masala,namak,lal mirch powder,chicken powder,zarda ka rang aur pani dal ker ache tarhan blend ker lein.
-Karahi mein nikal lein aur pani dal ker ache tarhan mix karein aur ubal anay dein.
-Safed chanay,hari mirch aur hara dhania dal ker ache tarhan mix karein aur darmiyani ancch per 18-20 minutes kliya paka lein aur dhak ker halki ancch per 4-5 minutes kliya paka lein.
-Serving plate mein khathiawari choley,tayyar hari chutney,tamatar,chaat masala,lal mirch crushed, pyaz,papri aur hara dhania dal dein aur pav buns ka saath serve karein! Z3AYRnQtjoY |
