Place all of the marinade ingredients into a bowl and whisk to combine. 2. Add the beef to a bowl. Add the white root spring onions (scallion) and half of the Korean marinade. Mix well to combine and adjust the seasoning. 3. Thinly slice the cucumber, add it to a bowl with the remaining ingredients, and combine. Let pickle in the fridge while we prepare everything else. 4. Place a saucepan over high heat. Add in the rice, water, salt and optional aromatics. Mix to combine to prevent clumps and bring to a boil. Place on a lid, reduce the heat to low and cook for 12 minutes. Turn off the heat, leave the lid on for 4 minutes, and then remove the aromatics and fluff with a fork. Set aside until ready to serve. 5. Place a large pan over medium-high heat. Add peanut oil, and once hot, add the beef. Spread it out and let it sit for 2 minutes to build a crust. Break it apart and cook for 3-4 minutes or until no longer pink. 6. Add the remaining marinade and bring to a boil. Reduce heat to medium-low and simmer for 3-4 minutes or until thick and saucy. Check the seasoning and remove it from the stovetop. 7. Portion into 5x 750ml meal prep containers. Add in the sesame, soy cucumbers, and kimchi (optional). Dig in.
