| Video Discription | Chicken pot pie in a cast iron skillet is a tasty way to use up that extra chicken you have in the fridge. It takes about an hour to grill, and as you can see it's very easy to do. If you like the video please hit the like button and subscribe if you want to see more. Chicken Pot Pie Recipe Indirect on the Weber Kettle grill Ingredients: 10” Cast iron skillet Small skillet or something you can use to melt a little butter. Basting brush 1/2 stick butter 1/2 cup chopped carrots 1/2 cup chopped celery 1/2 cup chopped onions 1 quart sliced button mushrooms 1/4 cup all flour 2 cups milk 1/2 teaspoon Salt 1 teaspoon Black Pepper 1 Teaspoon Granulated Garlic 4 or 5 grilled chicken thighs. 1/2 cup frozen peas 1 pre-made pie crust The Cook: Set up your grill for indirect grilling. Place skillet on grill to warm up. Cut most of the butter into the skillet saving a pat for the crust. Melt the butter coating the entire pan. Add the chopped carrots celery and onions. Sauté the vegetables until just translucent. Stir in the mushrooms and let cook for about 10 minutes. Sprinkle in the flour and stir in for a few minutes to make a rue. Slowly add the milk and give it a stir. Add 1/2 of your Salt, Pepper, and Granulated Garlic. Simmer for about half an hour stirring often and reduce by about half. Add the grilled chicken thighs and give a stir. Now stir in your frozen peas. Add the rest of the Salt, Pepper, and Granulated Garlic. Melt the rest of the butter in a small skillet on the grill This is when you add your pie crust. Push it down tight to the food, and then roll the edges into the a crust. Make a few slits into the crust to let the steam out. Grill with the cover on the grill for about 5 minutes. After 5 minutes coat the pie crust with the butter. This will help brown the crust. Grill for another half hour or until the crust is golden brown. Remove from the heat and let cool for about 20 to 30 minutes then enjoy.
