Ingredients: 2 boneless skinless chicken breasts Cayenne to taste Salt and fresh ground black pepper to taste All-purpose flour for dredging 30 mL (2 Tbsp) olive oil 15 mL (1 Tbsp) capers, drained 125 mL (½ cup) white wine Juice from 1 lemon 60 mL (¼ cup) chicken stock or water 45 mL (3 Tbsp) cold butter, cut up 30 mL (2 Tbsp) fresh Italian parsley Method: Butterfly and pound out the chicken breasts to ½" thick. Season breasts on both sides with cayenne, salt, and pepper. Heat a heavy pan with olive oil to medium high. Brown the chicken on both sides until mostly cooked through. Remove chicken from pan and toss in the capers. Crush about half of the capers with whatever kitchen tool you have in your hand... Deglaze the pan with the wine, and add the lemon juice. Add the chicken stock and bring to a boil. Reduce the heat to a simmer, and mix in the butter. As the butter melts into the sauce really shake and stir to fully emulsify. Sprinkle in some parsley and return the chicken to the pan. Continue to heat on low until chicken is fully cooked through. Sprinkle with more parsley to serve.
