| Video Discription | Wines from the Republic of Georgia Food and wine are inseparable in Georgian culinary tradition of supra or feast. And the wine, the food, the conversation are essential to Georgian culture. Wine in Georgia is part of the Georgian table as the primary drink. Georgia is considered the birth place of vine and winemaking, and wine has been made here for over eight thousand years. In 2017, an archaeological excavation near the capital Tbilisi found the evidence of the world’s earliest known winemaking which dates back to 6,000 BC. Georgian word for wine gvino is thought to give name to vino and wine. So good were the wines that the ancient world and Homer called them “fragrant”. Georgians still use ancient traditional qvevri way of making wine. Qvevri are huge clay wine vessels that are completely buried into the ground. Grapes are crashed in a large wooden boat-shape wine press satsnakheli traditionally by feet. Then along with skins, stems and seeds, the crushed grapes are poured into qvevri vessel for fermentation and storage, absorbing unique flavor and vitamins of the skin. Both red and white wine in Georgia are produced in qvevri. For white wines, long contact with skins and stems produces amber-colored wines that have a slightly bitter tannic taste and higher alcohol content. French writer Alexander Dumas called these unique wines “topaz wines of Kakheti”. In 2013, the Ancient Qvevri wine making method was added to UNESCO Intangible Cultural Heritage list. The European way of making wine was introduced in Georgia by Prince Alexander Chavchavadze only in the 19th century. The famous poet and public figure, Prince Alexander built a winery on the territory of his estate in Tsinandali to experiment with European way of making wines with local grape varieties. From that time, in addition to the traditional qvevri method, Georgians began to produce wines in a European manner. Georgia has over 500 indigenous grape varieties. Today, the majority of wines are made with European method - juice is separated from skins and seeds. Georgia produces excellent dry, semi-dry and semi-sweet vintages, as well as sparkling wines and brandy.
