Crisp and tasty cauliflower florets sautéed in a specially made honey chilli sauce makes it a lip-smacking snack that is sure to woo all the family members with its flavours.
HONEY CHILLI CAULIFLOWER
Ingredients
2-3 tbsps honey
½ tsp red chilli flakes
15-20 blanched cauliflower florets
½ cup refined flour
1 tbsp corn flour
½ tsp onion powder
½ tsp garlic powder
Crushed black peppercorns to taste
Salt to taste
1 tbsp oil + for deep frying
1 tbsp finely chopped garlic
2 spring onion bulbs, chopped
1 tbsp red chilli sauce
1-2 fresh red chillies, chopped
1 tsp soy sauce
1 tsp vinegar
3 tbsps chopped spring onion greens + for garnish
2 tbsps corn flour slurry
1 tsp toasted black sesame seeds
1 tsp toasted white sesame seeds + for garnish
Method
1. Take refined flour in a large bowl, add corn flour, onion powder, garlic powder, crushed black peppercorns, salt and ¼ cup water and whisk till a smooth thick batter is formed.
2. Heat sufficient oil in a kadai.
3. Coat each cauliflower into the batter and gently slide into the hot oil and deep fry till golden and crisp. Drain on an absorbent paper.
4. Heat 1 tbsp oil in a non-stick wok. Add garlic and spring onion bulbs and sauté for 1-2 minutes.
5. Add red chilli flakes, red chilli sauce, red chillies, soy sauce, vinegar, salt and 2 tbsps spring onion greens and mix well.
6. Add corn flour slurry, mix and cook for a minute. Add honey, mix and cook for a few seconds.
7. Add the fried cauliflower and toss till well combined. Add black sesame seeds and white sesame seeds and remaining spring onion greens and toss again.
8. Serve hot garnished with white sesame seeds and spring onion greens.
