| Video Discription | Let's do another fusion recipe, this time in form of an easy sheet pan chicken and vegetable roast! We are combining a popular Persian (Iranian) chicken dish with Greek/Mediterranean style roasted vegetables. Roasted potatoes and lemon wedges are a popular side dish throughout Greece and the Greek Isles! The Persian chicken part of this fusion is originally braised low and slow (over 2 hours) and flavored with saffron, turmeric, tomato paste, lime or lemon juice and garlic/onion. In this fusion, we roast everything on a single cookie sheet but marinate the chicken parts separately in the Persian marinade, while tossing the vegetables (purple onions, waxy potatoes, broccoli or broccolini) in salt, pepper, and olive oil (and optional fresh oregano and thyme or dried Italian herbs)! However, the lemon wedges (a part of the original Greek recipe) are marinated in the Persian saffron & turmeric magic! The result is truly magical! This technique is easy enough for a weeknight dinner to enjoy with the entire family or to make a large batch of chicken and veggies on Sunday for your week's meal prep. But it's also fancy and wholesome enough to serve your guests with some fancy white wine! I also enjoy serving this dish with my Persian Saffron rice!
