After all, the world's best restaurant (Osteria Francescana) and the world's best chef (Massimo Bottura) are based in Modena, and this is where tortellini were invented and where parmesan cheese and aceto balsamico are carefully curated. Modena is a small, charming and tranquil city in the heart of Italy's Emilia-Romagna region. We recently spent a month living here - exploring, discovering and indulging in the irresistible local cuisine. We visited a local dairy to see how parmesan cheese is made, we learned how to make tortellini from scratch AND we discovered a surprising tradition around Modena’s liquid gold “aceto balsamico” . We also found a new favorite snack, the gnocco fritto.
