| Video Discription | Ingredients: 1. Six pound bone in leg of lamb 2. 5 tbsp. Olive oil 3. 10 garlic cloves (5 sliced longwise and 5 minced) 4. 1 tbsp. chopped rosemary leaves 5 . I tbsp. chopped thyme leaves 6. Zest and juice of 1 orange 7. 3 tbsp. Greek yogurt 8. 3 tbsp. pomegranate molasses 9. 5 bay leaves 10. 5 Cloves 11. 5 Cardamom pods 12. 1 Stick of cinnamon 13. 1 tbsp salt 14. 2 tsp. ground black pepper Directions: 1. In a bowl to make marinade combine salt, black pepper, olive oil, Greek yogurt, pomegranate molasses, 5 minced garlic cloves, 5 cardamom pods (opened up), 5 cloves, zest of orange, and juice of orange and mix very well, set aside. 2. Pick leaves of rosemary and thyme from stems and chop coarsely 3. Add to the marinade, mix and set aside. 4. Slice remaining 5 garlic cloves. 5. Score the meat, 1/2” deep and stick garlic slices in. 6. place leg of lamb into a roasting pan and rub marinade all over it covering the sides, top, and bottom. 7. Place bay leaves on top of the leg of lamb. 8. Add cinnamon stick into pan. 9. Pour and unused marinade into the pan. 10. let the leg of lamb marinate in the fridge overnight, or at least 4 hours, turning once. 11. pull let of lamb out of the fridge and make sure it is placed fat side up. 12. Cover leg of lamb with a piece of parchment paper. 13. Cover and seal the pan tightly with foil. 14. Roast for 4 hours in a preheated oven at 400 degreees F. *** for best results marinate leg of lamb overnight, or at least for 4 hours flipping the leg of lamb at the two hour mark. |
