While I was developing my e-book on The Ultimate Low Carb / Keto Cake Recipes, I needed a better quality picture and I also found that the video was too lengthy. So this is a remake and the length of video has been cut into half so it's short and sweet hehe.. It is still one of my best cake recipes and I simply love the cream cheese fillings. The cake is so soft, fluffy, moist and it is incredibly delicious with the cream cheese fillings. The recipe can be viewed and printed at this link; https://docs.google.com/document/d/1djioIZhcDgyG3vw1jaR-EszRFXoDVkJfzzyjeUDKztw/edit?usp=sharing ( Total Servings = 12 ) NUTRITION INFO PER SERVING Total Carb = 1.3 g Dietary Fiber = 0.2 g Net carb = 1.1 g Calories = 182 Total fat = 18.3 g Protein = 3.8 g INGREDIENTS FOR CAKE Coconut flour = 60 g / 1/2 cup (OR Almond flour = 240 g / 2 cups) (OR Almond flour = 120 g + Coconut flour = 30 g) Cream Cheese (softened) = 80 g / 2/3 cup Unsalted Butter (softened) = 120 g / 1/2 cup Monkfruit = 80 g / 0.4 cup Whole eggs (room temp) = 4 large (230 g) Whipping Cream = 120 ml / 1/2 cup Baking powder = 4 g / 1 tsp FOR CREAM CHEESE FILLING Cream cheese (softened) = 200 g / 1 2/3 cups Powdered Sweetener = 24 g / 3 tbsp (I used Allullose but you could also use any keto friendly powdered sweetener) Egg Yolks (room temp) = 2 large [Note: Mix the cream cheese and powdered sweetener with a spatula until well combined. Add the egg yolks and mix until smooth] DIRECTIONS 1. Preheat the oven at 340F or 170C 2. In a bowl, mix the cream cheese with a spatula until soft and creamy. Then add the butter, sweetener and whisk until well combined and the butter has turned into a pale color. 3. Add the eggs one at a time and whisk until well combined. 4. Add the coconut flour, baking powder into the mixture and whisk to combine. Then add the whipping cream and mix until well combined. The batter is quite thick. 5. Spoon the batter into muffin cups or molds. I used a silicone muffin pan so it's super easy to remove the muffins. This recipe makes 12 medium sized muffins. Fill each cup or mold until 1/2 to 3/4 high. Set aside. 6. Prepare the cream cheese filling by mixing the cream cheese until soft and creamy. Then add the powdered sweetener and mix to combine. Lastly, add the egg yolks and mix until well smooth and creamy. 7. Spoon the cream cheese filling into a piping bag, tighten the bag and cut out the tip of the bag. 8. Squeeze the filling into the middle of the cake batter until all the filling is used up. 9. Bake at the lowest rack for 15 to 20 mins or until a toothpick comes out clean. 10. These muffins can be enjoyed warm or chilled. They can be refrigerated for up to a week and freeze for up to 3 months. NOTE This post may contain affiliate links.
