Maids of honour are individual pastry tarts filled with jam and sponge cake, dusted with a sprinkling of icing sugar they are a delicious afternoon treat. They are an old English recipe and it is said they date back to Henry VIII. Traditionally they are filled with raspberry jam but fill them with your favourite jam, as I have, and enjoy.
