So, I wanted to tell you more about ours. 🥐 For us, croissants are the backbone of our pastry kitchens here, and it’s what I’ve been working on for almost 25 years to try and perfect each day. Like most things in pastry and baking, they’re only as good as the ingredients you use. So first, let’s talk about flour. Ours is imported from France, called Les Grands Moulins de Paris (the windmills of Paris), which has a fine texture and high gluten content, giving us a beautiful structure and elasticity to our dough.
