| Video Discription | part 2: peri-peri pickled fries For ingredients and method of fermentation, please watch part 1 I left this to ferment for over a week, but 2-3 days is enough. To dehydrate, place on a rack and into a low oven, 50-70c (120-160f), for 4-6 hours, or until dry and brittle - some ingredients will dry faster than others, so check on it every now and then. Or use a dehydrator if you have one. Let it all cool completely before blending in pulses, until it's a fine powder. The brine has seasoned everything, so you won't need to add any more salt to this. Pat the potato very dry before frying - first at 160c (320f) until fully cooked, about 5 minutes. Let the fries cool on a rack before frying again at 190c (375f) until lightly golden, about 2 minutes. Then immediately dust in the peri-peri powder.
