| Video Discription | Putting my Biryani skills to good use. Get your Nandos fix with my One Pot Peri Peri Chicken and Rice. It's plucking awesome! Marinade for 500g (you will have some left over which you can use for a sauce) 500g of chicken 1 onion 1 red pepper 2 large red chillies 6 garlic cloves 1/2 tablespoon oregano 1/2 smoked paprika Juice of 1 lemon and zest of half lemon 1 teaspoon sugar 2 teaspoon salt 1 teaspoon black pepper 3 tablespoon olive oil Peri Peri Rice 2 tablespoon butter 2 garlic cloves minced 1 onion 2 teaspoon red chilli flakes 1 teaspoon paprika 1/2 teaspoon cumin 1 teaspoon turmeric 1 and half teaspoon salt Pinch of black pepper 2 cup rice 1 cup chicken stock 1/2 cup peas 1/2 cup yellow pepper Instructions Blend together the ingredients for the marinade. Marinade the chicken and refrigerate for an hour minimum. On a deep pan, cook the chicken. Sear it for 5 to 6 minutes on each side then cook until 90% ready. On the same pan, add 1 and a half tablespoon butter (unsalted) Add your garlic and fry for 30 seconds. Then add your onions and saute for 2 to 3 minutes until translucent. Then add your spices and fry for about one minute. You're now going to add your uncooked rice (make sure it's been soaked for 30 mins and is washed before adding). Mix together. Now add your chicken stock and water. Mix together. Place the chicken pieces on top. Make sure the water covers the rice 1 inch above the surface of the rice. Cover with lid and cook on high for 5 minutes. Then go on low heat for around 15 minutes until rice is cooked.
