And one more merit – it is easy to cook a cucumber kimchi. ❤️ If you like the recipe and want to say thanks, you can buy us a coffee - http://buymeacoffee.com/alwaysyummy ✅ Ingredients: • cucumber – 21 oz | 600 g • salt – 2 tsp • garlic – 4 cloves • scallion (whites) – 1 oz | 40 g • ginger – 1 oz | 30 g • fish sauce – 1 tbsp • rice vinegar – 4 tbsp • red chili flakes – 2 tbsp • sugar – 4 tsp ✅ You will need: • grater • carving board • bowl 📙 Preparation: 1. Halve the cucumbers lengthwise and then across into small slices. Lay out into a bowl and combine well with the salt. Leave for 30 minutes at room temperature. 2. Meanwhile chop the scallion whites and garlic and grate the ginger. 3. Combine the garlic, scallion, ginger, vinegar, red chili flakes, sugar and fish sauce in a bowl. 4. Drain the cucumbers and add into the prepared sauce. Cover the cucumber kimchi and put into a refrigerator for 12 hours before serving. MOSg_SRZVh4 |
