| Video Discription | Incredibly smooth homemade Heather Honey ice cream topping delicious fresh strawberries. Serve this with a glass of Pimm鈥檚 for the perfect Wimbledon treat. Serves 4 Ingredients: The Scottish Bee Company Heather Honey 300ml Double Cream 100ml Whole Milk Caster/Granulated Sugar Strawberries Salt Method: 1. Add the cream to a large bowl with 1 tsp sugar. Whip until thick. 2. Gently warm through the milk in the microwave, you want it to be warm not hot. Pour this over 125g Heather Honey and mix with a small pinch of salt. 3. In 3 stages, slowly and gently whisk the honey mix into the whipped cream. Once finished you should have a smooth, thick base for the ice cream. 4. Pour this into a freezable container, cover with foil and add to the freezer. 5. After 45 minutes, mix well with a fork for 1 minute. Repeat this process twice more (3 times in total). 6. After the 3rd mix, add a sheet of baking paper directly on top of the ice cream and then cover the container again with foil. Freeze for at least 1 hour. If you freeze it for a few hours, it may need 5 minutes in the fridge before serving. 7. Slice the strawberries in half or in quarters, add to a bowl and then sprinkle over 1 tbsp sugar. Leave in the fridge for 1 hour to macerate. 8. When ready, add a good spoonful of strawberries into a bowl, top with a big scoop of ice cream and then top with a final strawberry. 9. Serve and enjoy!
