Drizzle olive oil over hash browns and toss to coat. Separate into a single layer and cook in a 400 degree oven for 10-15 minutes. Meanwhile, crumble and brown sausage, drain and set aside. In a separate bowl, whisk together eggs, onion powder, pepper, salt and milk. Grease a 9X13 inch pan. Place cooked hash browns on bottom. Top with shredded cheese, then sausage. Pour eggs over the top. Top with remaining 1/2 cup cheese. Cook at 350 degrees for 45-50 minutes or until eggs are cooked through. Top with green onions (optional) Enjoy!!
