| Video Discription | Ukha is a clear Russian soup, made from various types of fish such as bream, wels catfish, northern pike, or even ruffe. It usually contains root vegetables, parsley root or celery root, carrots, potato, bay leaf, dill and green parsley, and is spiced with black pepper. Ukha often cooked in a cast iron pot on the campfire near the lake, where the fish was caught. Today, I am making Ukha with stripped Sea bass and will use all parts of the fish for making rich fish broth and soup. I have 1 whole see bass, about 4-5 pounds. Cut off head, fins, gut it, clean scales and gilts. Filet fish and reserve bones for the broth. Use cheese cloth and place all fish parts(as it shown in the video)in it. For fish broth you will need: Fish bones. 1 large onion 1 large parsnip 2 stalks celery 1 celery root 1 large carrot fresh parsley 2 bay leaves 1 tsp coriander seeds 5-6 black peppercorns To 8.5 qts pot add fish bones, pour 5.5 qts cold water, bring to boil, remove impurities, add all vegetables listed and simmer for 45-60 minutes. At the last 10 minutes of cooking add spices: bay leaf,seeds and peppercorns. Discard all vegetable, used for making broth, strain it and return to the pot. Bring to boil. For the soup you will need: Fish filet, cut into 1-2 inch pieces. 1 large carrot(sliced) 1 large parsnip(sliced) 1-2 celery roots(sliced) 4-5 small Yukon gold potatoes(cut into quarters) 1 bunch fresh dill(chopped) 1 bunch fresh parsley(chopped) salt and pepper to taste. Season fish pieces and let rest for ten minutes. Add all vegetables to broth and cook for 10-15 minutes until fork tender. Add fish pieces and cook for another 10 -15 minutes. Season with salt and pepper. Don't be afraid to spice it up with black pepper, it will give this soup a unique taste. At the last moment add fresh herbs. Ready! Enjoy! Thank you for watching!
