| Video Discription | #백종원 #집밥백선생 #닭볶음탕 삼복(三伏)더위 중 마지막인 말복이 다가오고 있습니다. 마지막 무더위를 얼큰하게 날릴 닭볶음탕을 소개합니다. 매콤한 닭볶음탕으로 집에서 원기회복하세요~! =================================== 닭볶음탕 [재료] 토막닭 1kg(10호 1마리) 황설탕 70g(1/2컵) 간 마늘 45g(1/3컵) 진간장 190g(1컵) 굵은 고춧가루 45g(1/2컵) 고운 고춧가루 30g(1/3컵) 감자 270g(2개) 당근 160g(1/2개) 양파 240g(1/2개) 대파 160g(3대) 청양고추 30g(4개) 홍고추 10g(1개) 새송이 50g(2개) 표고버섯 70g(3개) 후춧가루 2g(약간) 물 600mL [만드는 법] 1. 표고버섯은 1/4 크기로 자르고 새송이버섯은 2cm 두께로 잘라 준비한다. 2. 당근은 반으로 갈라 1.5cm 두께로 썰어 준비한다. 3. 양파는 1/6 정도로 자른다. 4. 감자는 껍질을 제거하고 반으로 갈라 1/6 정도로 자른다. 5. 청양고추, 홍고추 2~3cm 통으로 잘라준다. 6. 대파도 2~3cm 통으로 잘라준다. 7. 흐르는 물에 닭 뼈, 내장을 깨끗하게 세척한다. 8. 냄비에 물 600mL(닭이 잠길 정도) 토막 닭 1마리, 황설탕 1/2컵을 넣고 끓인다. 9. 끓으면 감자, 당근, 양파를 넣고 익힌다. 10. 채소가 반 정도 익으면 간 마늘 1/3컵을 넣는다. 11. 간장 1컵을 넣고 끓으면 새송이버섯, 표고버섯을 넣는다. 12. 고춧가루 1/2컵, 고운 고춧가루 1/3컵을 넣어 30~40분 정도 끓인다. 13. 농도를 맞춘 후 대파, 청양고추, 홍고추, 후춧가루를 넣어 마무리한다. * 토막 닭은 흐르는 물에 충분히 씻어준다. (내장 쪽에서 특히 잡내가 날 수 있으니 주의하여 세척한다.) * 기호에 따라 끓이는 시간을 조절한다. (원하는 국물의 농도가 나올 때까지 졸여준다.) * 냄비의 크기와 화구의 세기에 따라 물양은 가감한다. Dakbokkeumtang (Braised Spicy Chicken) [Ingredients] Cut chicken 1kg (No.10) Brown sugar 1/2cup (70g) Minced garlic 1/3 cup (45g) Dark soy sauce 1 cup (190g) Coarse chili powder 1/2 cup (45g) Fine chili powder 1/3 cup (30g) 2 potatoes 270g 1/2 carrot 160g 1/2 onion 240g 3 green onions 160g 4 Cheongyang peppers 30g 1 red pepper 10g 2 king oyster mushrooms 50g 3 Shiitake mushrooms 70g A pinch of pepper 2g Water 600mL [Directions] 1. Cut shiitake mushrooms into quarters and slice king oyster mushrooms into 2cm-wide pieces. 2. Cut carrot in half and slice into 1.5cm-wide pieces. 3. Slice 1/6 of onion. 4. Remove potato peel and half in half before cutting into sixths. 5. Chop Cheongyang pepper and red pepper into 2~3cm-wide pieces. 6. Chop green onion into 2~3cm-wide pieces. 7. Clean chicken bones and guts out of chicken under running water. 8. Add 600mL (enough to submerge chicken) to a pot and put in 1 chicken and 1/2 cup of brown sugar. 9. Once the water boils, add potatoes, carrots, and onions. 10. Once vegetables are half cooked, add 1/3 cup of garlic. 11. Add 1 cup of soy sauce and add king oyster and Shiitake mushrooms. 12. Add 1/2 cup of coarse chili powder, 1/3 cup of fine chili powder, and cook for 30-40 minutes. 13. After getting the right consistency, finish with green onions, Cheongyang pepper, red pepper, and pepper. * Rinse chicken under running water. (The area around the guts can smell, so clean thoroughly) * Adjust cooking time based on preference.
