In a mixer or by hand Cream together butter spread, applesauce, Lakanto classic and cottage cheese until blended. Add dry ingredients to cottage cheese mixture and stir until combined. Form dough into a log. Wrap in plastic wrap and chill for at least 3 hours or overnight in the refrigerator. Cut into 16 slices and place slices 2 inches apart on a baking sheet lined with parchment paper. Bake at 375°F for 12 –14 minutes or until lightly browned. Let sit for about 5 minutes then place on cooling wrack. Let cool completely before frosting. For the Cream Cheese Frosting In a large bowl beat together the cream cheese, Tbsp Greek yogurt, powdered sweetener and 1/2 tsp vanilla until no lumps remain. Frost the cookies when cooled. About ½ tbsp of frosting on each cookie. Refrigerate leftovers. I found they taste even better after sitting in the fridge another couple of hours! Makes 16 servings. WW Points per serving - 2 PTs.
