So while I was making it one time, I tried a different method that is to first cook and then blend. OMG this was a total game changer preparing it this way gave me the color I always wanted and the taste was so over the top and it definitely reduced my cooking time so this recipe is a winner. Made famous by Nando's, this Portuguese sauce hits all the right notes. Peri Peri Chilies is a hot pepper like tabasco chili and seriously packs a punch. Due to the non-availability of peri peri chilies locally I have substituted them with Bird's eye chillies or Thai red chills and a few Habanero peppers which are another spicy variety of chilies. The bird's eye are less spicy compared to peri peri but adding a fair amount of them along with habanero works well. You can use any fresh chili variety available in your region or you can also use dry chilies soaked in hot water. I have smoked the rest of the fresh ingredients to get the smoky flavor in the sauce. Make this for your next party and I am sure it will be an instant hit. You can use them immediately or store them in the refrigerator for upto 2 weeks.
