| Video Discription | Meatballs...there are so many uses for meatballs, from soup to appetizers to pasta meals to sandwiches. They are so handy to have on hand and can be easily purchased in bags from your supermarket's freezer section. But how many times have you made that purchase and been disappointed? I have sometimes felt I needed to use them with some strong flavored sauce, just to make them edible. It's so much nicer to have meatballs you made yourself ready in your freezer. You not only can guarantee you love the taste, but you know exactly what is in them. Whether cooked or uncooked, freezer friendly meatballs are a boon to the home freezer. I keep some on hand at all times. Easy Freezer Meatballs INGREDIENTS • 3 pounds ground beef • 2 3/4 cups breadcrumbs • 2-3 eggs • 1 tbsp oil (if using lean ground beef) • 1/4 cup grated parmesan cheese • 1 tbsp Italian seasoning • 1 tbsp garlic powder • 1 1/2 tbsp onion powder • 3 tbsp minced garlic • 2 tbsp dried parsley • 2 tbsp dried oregano • 3/4 tsp salt • 3/4 tsp black pepper PREPARATION STEPS 1. Mix all ingredients together thoroughly. The easiest way is to get in there with your hands, but use a gentle touch so as not to make the meatballs tough. 2. Form into meatballs of whatever size you prefer, either by hand or with a cookie scoop. 3. To freeze uncooked meatballs: Flash freeze on parchment-lined cookie sheets or pans. Divide into freezer storage bags into the amounts that you will need for a meal. Be sure to mark as Uncooked and include the date. To cook frozen meatballs, remove from the freezer the day before needed and thaw in the refrigerator overnight. Use them in whatever recipe you'd like the next day. You can: Place on a baking sheet in a single layer, cover with foil, and bake at 350° for 10 to 12 minutes, stirring occasionally, or Simmer in sauce or soup for at least 20 minutes, or Place in a microwave-safe dish in a single layer with a spoonful of water. Cover loosely and heat on HIGH for 1 minute at a time until heated through. 4. To freeze meatballs already cooked: Place meatballs on a baking sheet lined with foil and bake at 350° F for 10 to 20 minutes, depending on size, until done. Turn halfway through cooking, if desired. Divide into freezer storage bags into the amounts that you will need for a meal. Be sure to make the container or bag with Cooked and the date. 5. Frozen meatballs are best used within 4 months, cooked or uncooked.
