I love this dish so much and becomes one of our family’s favorite, be it lunch or dinner and sometime even in breakfast, hahaha… We have a big appetite for this viand. Today, in this video, I will show you how I cook Pork Igado. I learned this method from my Ilocano husband and this is one of his specialty. According to him, this is how an authentic igado menu should be cooked, so it’s how I’m doing it 😊 Original igado daw nya... Tips in Cooking Pork Igado: 1. Use pork tenderloin in this recipe. 2. Cut the pork and liver in uniform strips to ensure even cooking. 3. Cook the liver separately and do not overcook. Leave it soft and chewy with some blood to it. When you add this in the later part of cooking, the remaining blood I the liver will help thicken the sauce of this dish, 4. When adding the marinade with the vinegar on it, allow it to boil uncovered and undisturbed for a few minutes before adding the water to cook the strong acid taste of the vinegar.
